Ever since I watched that damn documentary about blue zones, I’ve been trying my hardest to move accordingly, physically and mentally. And don’t come for me. I know ya’ll are thinking, “Bruh, how healthy can you be?” So I’m not going to hold y’all. The body card never declines, but I’m not always on and I want to be. And I want to share the live version of my journey with you–along the way. But that’s a topic for another day. Basically, I want to reach my 100th birthday because my great grandmama lived to 102! Shit, why not?!
I promise, the kale salad has everything to do with it.
Lately, I eat very little meat and have packed my fridge with powerful whole, raw fruits and vegetables. My Spicy Truffle Kale Salad is bussin’ with cherry tomatoes, sweet corn, capers, spicy seasonings and oils. Dino kale is packed with vitamin A, which helps maintain good vision and supports immunity health. Cherry tomatoes, these cute babies, are also a good source of vitamin A. They’re rich in lycopene, a plant chemical that gives tomatoes (and other whole foods) their color and a powerful natural antioxidant, that may help protect our cells from heart disease and certain types of cancer. Corn has similar nutritional values. Oh, and avocado slices on top might go. Tell me how it is!
Spicy Truffle Kale Salad
Serving Size1 Serving
– Dino kale
– Sweet corn
– Cherry tomatoes
– Truffle oil
– Olive oil
– Chili powder
Wash and dry your veggies. Cut ’em up, throw them in a bowl, and toss in your oils and seasonings.
